A fun bottle to start off our year!
Tart Belgian-ish Tripel fermented with our house abbey yeast then aged in ex-bourbon gin barrels with our house mixed culture of wild yeast and souring bacteria. After nine months, the beer was refermented in cork and caged 750ml champagne bottles for twelve months for further conditioning and refinement. 9.5% ABV. Lively and lovely!
